    Recipe Introduction


    A simple dish. But it is bound to knock their socks off. Serve with rice noodles.


    List of Ingredients


    • 1 tbsp sunflower oil
    • 1 Tbsp sesame oil
    • 1 onion, sliced
    • 1 garlic clove, crushed
    • 1 Tbsp grated ginger root
    • 1 lb fillet or rump steak, cut into thin strips
    • 2 tsp palm or demerara sugar
    • 2 Tbsp light soy sauce
    • 1 small yellow belle pepper, cored, deseeded and chopped
    • 1 red bell pepper, cored, deseeded and chopped
    • 4 scallions, chopped
    • 4 large open-cup mushrooms, sliced
    • 4 Tbsp roasted cashews
    • 3 Tbsp stock or white wine
    • 2 celery sticks, chopped


    Instructions


    1. Heat the oils in a large, heavy bottomed skillet or wok. Add the onion, garlic and ginger and stir fry for about 2 minutes until softened and lightly colored.
    2. Add the steak strips and stir fry for a further 2-3 minutes until the meat has browned.
    3. Add the sugar and soy sauce, mixing well.
    4. Add the belle peppers, scallions, celery, mushrooms, and cashews, mixing well.
    5. Add the stock or wine and stir fry for 2-3 minutes until the beef is cooked through and the vegetables are tender crisp.
    6. Serve the stir fry immediately with rice noodles.


    Final Comments


    A note about palm sugar, it can be hard to come by. If you can't find any, use demerera or a soft dark brown sugar instead.
