Peppered Beef Cashew

Recipe Introduction
A simple dish. But it is bound to knock their socks off. Serve with rice noodles.
List of Ingredients
- 1 tbsp sunflower oil
- 1 Tbsp sesame oil
- 1 onion, sliced
- 1 garlic clove, crushed
- 1 Tbsp grated ginger root
- 1 lb fillet or rump steak, cut into thin strips
- 2 tsp palm or demerara sugar
- 2 Tbsp light soy sauce
- 1 small yellow belle pepper, cored, deseeded and chopped
- 1 red bell pepper, cored, deseeded and chopped
- 4 scallions, chopped
- 4 large open-cup mushrooms, sliced
- 4 Tbsp roasted cashews
- 3 Tbsp stock or white wine
- 2 celery sticks, chopped
Instructions
- Heat the oils in a large, heavy bottomed skillet or wok. Add the onion, garlic and ginger and stir fry for about 2 minutes until softened and lightly colored.
- Add the steak strips and stir fry for a further 2-3 minutes until the meat has browned.
- Add the sugar and soy sauce, mixing well.
- Add the belle peppers, scallions, celery, mushrooms, and cashews, mixing well.
- Add the stock or wine and stir fry for 2-3 minutes until the beef is cooked through and the vegetables are tender crisp.
- Serve the stir fry immediately with rice noodles.
Final Comments
A note about palm sugar, it can be hard to come by. If you can't find any, use demerera or a soft dark brown sugar instead.
