List of Ingredients
- 1 lb Chinese egg noodles (I prefer fine)
- 2 - 3 tbsp sunflower oil
- 2 tbsp sesame oil
- 1 garlic clove, crushed (i prefer 3)
- 1 - 1 1/2 tbsp smooth peanut butter
- 1 small green chile, chopped de-seeded (lacking, use curshed chili pepper flakes)
- 3 tbsp toasted sesame seeds
- 4 tbsp light soy sauce
- 1-2 tbsp lime juice
- salt and pepper
- 4 tbsp chopped fresh cilantro or 2 - 2 1/2 tsp dried cilantro
Instructions
- Place noodles in a large pan of boiling water and remove from heat immediately. Cover and leave to stand for 6 minutes. Stir once. Perfectly cooked noodles.
- TO make the dressing, mix the oils with the garlic and peanut butter until smooth. I find a little heat helps the peanut butter to mix easier.
- Add the chile, sesame seeds, soy sauce and lime juice to taste and mix well. Season with salt and pepper.
- Drain noodles thoroughly then place in a heated serving bowl. Add the dressing and toss in the cilantro. Serve immediately.
