    List of Ingredients


    • 1 lb Chinese egg noodles (I prefer fine)
    • 2 - 3 tbsp sunflower oil
    • 2 tbsp sesame oil
    • 1 garlic clove, crushed (i prefer 3)
    • 1 - 1 1/2 tbsp smooth peanut butter
    • 1 small green chile, chopped de-seeded (lacking, use curshed chili pepper flakes)
    • 3 tbsp toasted sesame seeds
    • 4 tbsp light soy sauce
    • 1-2 tbsp lime juice
    • salt and pepper
    • 4 tbsp chopped fresh cilantro or 2 - 2 1/2 tsp dried cilantro


    Instructions


    1. Place noodles in a large pan of boiling water and remove from heat immediately. Cover and leave to stand for 6 minutes. Stir once. Perfectly cooked noodles.
    2. TO make the dressing, mix the oils with the garlic and peanut butter until smooth. I find a little heat helps the peanut butter to mix easier.
    3. Add the chile, sesame seeds, soy sauce and lime juice to taste and mix well. Season with salt and pepper.
    4. Drain noodles thoroughly then place in a heated serving bowl. Add the dressing and toss in the cilantro. Serve immediately.
