Chinese Fried Rice w/Bacon & Mushrooms

Recipe Introduction
Mom made a huge Chinese dinner one night. She had fortune cookies at the end of the meal. We all opened them and they spelled out that she was expecting a baby...Traci. This is one of the recipes from that night.
List of Ingredients
- 3 tbls bacon drippings
- 1/2 cup green onions and tops
- 1 cup celery, diced
- 1 cup mushrooms, sliced
- 3 cups cooked rice
- 2 tbls soy sauce
- 1 egg, slightly beaten
- 1/2 lb. crisp bacon, crumbled
Instructions
- Heat bacon drippings in skillet: add onions and celery. Cook until tender.
- Add mushrooms, rice and soy sauce. Cook 10 minutes on low heat, stirring occasionally.
- Stir in beaten eggs and cook only until eggs are done.
- Add bacon and mix well. Extra soy sauce may be served with rice.
