    Recipe Introduction


    Mom made a huge Chinese dinner one night. She had fortune cookies at the end of the meal. We all opened them and they spelled out that she was expecting a baby...Traci. This is one of the recipes from that night.


    List of Ingredients


    • 3 tbls bacon drippings
    • 1/2 cup green onions and tops
    • 1 cup celery, diced
    • 1 cup mushrooms, sliced
    • 3 cups cooked rice
    • 2 tbls soy sauce
    • 1 egg, slightly beaten
    • 1/2 lb. crisp bacon, crumbled


    Instructions


    1. Heat bacon drippings in skillet: add onions and celery. Cook until tender.
    2. Add mushrooms, rice and soy sauce. Cook 10 minutes on low heat, stirring occasionally.
    3. Stir in beaten eggs and cook only until eggs are done.
    4. Add bacon and mix well. Extra soy sauce may be served with rice.
