    List of Ingredients




    1 loaf French bread, cut into 36 slices
    2 T oil
    1 lb. roma tomatoes, chopped (about 2 1/2 C)
    1 pkg. (4 oz.) feta cheese, crumbled with basil and tomato
    1/2 C finely chopped red onions
    3 T chopped parsley
    1 T chopped ripe olives (very optional)
    1/4 t pepper

    Recipe



    Preheat broiler. Place bread on baking sheet. Broil 2-3 minutes on each side or until lightly toasted on both sides. Brush 1 side of each toast slice with 1 T oil. Meanwhile, mix tomatoes, 1 T remaining oil, the cheese, onions, parsley, olives and pepper. Spoon about 2 t of the tomato mixture onto each toast slice just before serving.
