I usually add 1 lb. browned ground beef to this.
List of Ingredients
1 T vegetable oil
2 cloves garlic, finely chopped
1/2 C chopped onion (about 1 medium)
3 C chopped green cabbage (about 1/2 medium head)
2 C chopped zucchini (about 2 small)
1 C sliced carrots 9about 2 medium)
1 C chopped celery (about 2 medium stalks)
4 C vegetable broth
4 C tomato juice
1 C dry red wine
1 T dried basil leaves
1 t salt
1/2 t dried oregano leaves
1/4 t pepper
1 can (28 oz.) whole tomatoes, undrained
1 can (15 oz.) garganzo beans, rinsed and drained
1 can (15 oz.) kidney beans, rinsed and drained
1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed to drain
Grated parmesan cheese, if desired
1 lb. browned ground beef, optionalRecipe
Heat oil in 8 quart pan over medium heat. Cook garlic and onion in oil about 2 minutes, stirring occasionally, until onion is tender. Stir in remaining ingredients, except cheese; break up tomatoes. (Ground beef optional) Heat to boiling; reduce heat. Cover and simmer 1 hour. Serve with cheese.
