List of Ingredients
2 pkg active dry yeast
1/4 cup warm water (110 degrees)
1 1/2 cup buttermilk*, lukewarm
1/2 cup melted shortening, salad oil or margarine
1 tsp salt
4 1/4 cup flour
1/2 tsp baking soda
1/4 cup sugar
* 1 1/2 cup of milk mixed with 1 1/2 tbsp lemon juice or vinegar left 10 minutes at room temperature may be substituted for the buttermilk.
Recipe
Dissolve yeast in warm water. Combine buttermilk, sugar, melted shortening and salt. Sift flour and soda in a large bowl. Mix yeast with buttermilk and add to four mixture. Mix well. More flour may be added if mixture is too sticky. Try not to add too much flour as it will make bread stiff and dry.
Let stand 10 minutes. Roll out and cut into desired shape. Melt butter in bottom of baking pan. Place rolls in pan turning each over to butter the tops. Let stand 30 minutes. Bake at 425 for 10-12 minutes.
Options:
Knead dough until smooth.
Use honey instead of sugar.
Make cloverleaf rolls by placing three small balls of dough in greased muffin tins.
Form the rolls by hand by tearing off a portion and rolling between palms.
