A family recipe serviced on special occassions. Barbara made this receipe from memory every Christmas.
List of Ingredients
Yellow squash
Small cheese whiz
2 eggs
1 normal size green chili chopped
1 small chopped onion or dried onion flakes
salt and pepper to taste
1 can cream of celery soup
Recipe
Cut up squash and cook until tender - approximately 15 minutes. Drain. Put cheese whiz in the bottom of a casserole dish and top with squash.
In a separate bowl beat eggs, chopped green chili, onion, salt and pepper to taste. Pour on top of squash in casserole dish. Top with one can cream of celery soup. Bake at 350 degrees approximately 1 hour or until sides brown and mixture bubbles.
