Sauteed Lemon Chicken Breasts

2 pounds of chicken breast, boneless/skinless
1/3 cup flour
4 tblsp butter
2 tblsp olive oil
juice of one lemon
salt and pepper to taste
1 tblsp minced parsley
Recipe
Dredge each chicken breast in flour. Salt and pepper to taste. Melt butter and olive oil in skillet. When it foams brown chicken and cook over medium heat 3 minutes. Pour off most of fat/oil. Place in shallow pan. cover with foil and bake in preheated 375 oven for 20 minutes or until done. Remove foil. Drizzle with lemon juice and parsely.
