Recipe Introduction
Because Mother (June Berry Boggs) raised chickens, we had an abundance of eggs. Using egg whites, Mother would make a platter of divinity almost every weekend. On humid days, the divinity would not set, and we kids would be allowed to spoon up huge gobs of this runny sugary confection.
List of Ingredients
2 cups sugar
1/2 cup white corn syrup
1/2 cup water
1 teaspoon vanilla
1/2 cup broken nuts
Recipe
Stir until sugar is dissolved; then cook without stirring to 252o (a little dropped into cold water forms a hard ball). Remove from heat and pour, beating constantly, in a fine stream into 2 egg whites, stiffly beaten
Continue beating until mixture holds its shape and loses its gloss. Add:
1 teaspoon vanilla
1/2 cup broken nuts
Drop quickly from tip of spoon onto waxed paper in individual peaks or spread in greased shallow pan and cut into 1" squares when firm.
Yields 1 1/4 pounds.
