Recipe Introduction
Every Sunday evening Mom and Dad took the four of us to visit Grandpa and Grandma Boggs (Hilda and Plummer). Grandma Boggs kept her cookie jar filled with her brown sugar cookies. We kids were allowed to pick a cookie for ourselves. Generally, she used animal cookie cutters; I always tried to pick a cookie shaped like a giraffe (something about that long neck intrigued me). The camel shape was another favorite. I remember these cookies tasting delicious.
List of Ingredients
2 cups brown sugar
1 cup lard or butter
1/2 cup hot water
1 egg
2 teaspoons vanilla
1 teaspoon baking powder
2 teaspoons soda
Flour as needed
Recipe
Stir together sugar and lard. Add hot water and mix. Add well-beaten egg and vanilla. Beat this mixture until light.
Add soda and baking powder to about four cups of flour and mix. Then add more flour until the mixture rolls well.
Sprinkle cookies with granulated sugar.
Bake at 375 degrees about ten minutes. This recipe makes at least four cookie sheets of cookies. (Butter makes a better flavored cookie but the lard is all right to use.)
