Spanish Pork Chops and Rice

Recipe Introduction
This is my absolute favorite pork chop recipe. The cheese and the tomatoes and the rice really compliment the chops. Mom made this when we were growing up.
List of Ingredients
5 pork chops -1/2 inch thick
2 tbsp shortening
1 tsp salt
½ tsp chili powder
Dash pepper
1 ½ cups uncooked long-grain rice
½ cup chopped onion
1 -28 oz can tomatoes chopped
Velveta cheese
Recipe
Brown chops in melted shortening about 20 minutes. Drain off excess fat.
Combine salt, chili powder and pepper; sprinkle over meat. Add rice and onion. Pour tomatoes over. Cover and cook over low heat 35 minutes until rice and meat are tender, stirring occasionally.
The last five minutes of cooking loosely place thin slices of Velveta cheese over top. When cheese is melted, stir cheese and rice together, and then serve.
