Chicken Tortilla Soup

List of Ingredients
1 onion, chopped
2-3 cloves garlic minced
1 Tbsp olive oil
1 tsp dried oregano
1/8 tsp cumin
1/2 Tbsp dried cilantro
1 can Rotel lime with cilantro tomatoes
3 cans diced tomatoes
4 cups chicken broth
1/2 tsp salt
little bit of sugar
3 cans of beans (of choice), rinsed and drained
2 cups corn
diced chicken
(Add 1/2 tsp chili powder for extra hot)
Recipe
In a medium stock pot, heat oil over medium heat. Sauté onion until tender, add minced garlic the last minute.
Blend tomatoes well in blender and add along with water, oregano, chili powder, cumin, dried cilantro, salt, and sugar.
Let simmer 10-20 minutes.
Add beans, corn and chicken.
Simmer for 10-20 minutes.
Serve with crushed tortilla chips, cheese and chopped green onions, or with cornbread.
