    I was looking for a good potato soup recipe and came across this one. It is just fantastic. The cream of chicken soup really makes it rich. Plus it is lower in fat since I am not using any cream.

    List of Ingredients




    • 3 lbs red potatoes, unpeeled, cut into large chunks
    • 2 c. milk
    • 2 cups chicken stock
    • 1 white onion, chopped
    • 1/4 - 1/2 stick margarine or butter
    • 2 T parsely
    • seasoned salt
    • garlic pepper
    • 2 T.chopped garlic
    • 1 large can cream of chicken soup
    • 1/2 c. sour cream
    • 6 cubes of velveeta cheese
    • 2 T margarine or butter
    • Chives
    • Bacon Bits

    Recipe



    • Put potatoes in large stove top pot, cover with water and chicken stock. (May need more liquid)

    Sautee in another pan, the butter, onion, seasoned salt, garlic pepper, margarine, garlic, and parsley.

    Pour milk, stock, sour cream, cream of chicken soup, and velveeta in a pot and mix together.

    Use flour to make it the thickness that you want

    Add the garlic and onion

    When potatoes are just tender add them to the milk, stock, velveeta cheese pot.

    Cook another 10 minutes or longer

    Top each serving with more cheese, chives, and bacon bits

    ** This really is a guessipe, so be prepared to add some more milk and allow it to reduce a little more to get it thick and creamy **
