    Boiled Potatoes

    From Irene the Kitchen Queen. This is MENU 1B -- see MENUS 1A and 1C for the complete meal.


    List of Ingredients


    • 4 Idaho potatoes
    • 1/2 Teaspoon salt


    Instructions


    1. Peel the potatoes, cut in half and then quarter the halves. The pieces should be the same size so they cook evenly.

    2. In a 5 quart pan, bring salted water to a boil, add the potatoes, cover and cook for 20 minutes -- until a knife goes into the potatoes easily. Do not overcook (or they will fall apart).



    Final Comments


    Serve plain, or with butter. Try them with some low fat sour cream!
