2 eggs
2 1/2 cups sifted meal
2 cups buttermilk
3 tbsp. melted shortening
2 tsp. salt
1 tsp. soda
3 tsp. baking powderRecipe
Beat eggs together until light. Add milk, shortening and salt. Add meal to make a medium batter. Beat smooth. Grease and heat muffin pans. Sift in baking powder and dissolve the soda in a spoonful of cold water. Add to mixture, stir well and pour into molds. Bake at 450 degrees F. until brown and crusty, 20 or 25 minutes. Makes 20 muffins.
