List of Ingredients
1/2 lb. butter
1/2 lb. brown sugar
6 eggs
4 cups flour (sifted four times)
1/4 cup brandy (grapejuice or wine if preferred)
1 tsp soda (dissolved in molasses)
1 cup strawberry preserves
1/2 cup molasses (or syrup)
Fruit cut in small pieces:
1/2 lb. nuts
1/2 lb. cherries
1/2 lb. pineapple
1/2 lb. citron
1/2 lb. mixed fruits (optional)
2 lbs. raisins
1 lb. dates
Spices to be seeped in Brandy overnight:
1 tsp nutmeg
2 tsp cinnamon
1 tsp cloves
2 tsp allspice
1 tsp mace
2 tsp mixed spices for fruit cakeRecipe
Approximately 6 lbs. fruit to be used (or less won't matter). Cream butter and sugar, add eggs one at a time and beat well, add flour alternately with liquid, flour fruit well in extra flour and add last.
Cook approximately 3 hours at 325 degrees in electric oven in heavy aluminum pan, well greased with paper on bottom of pan. Be sure all fruit is well blended in batter.
