Golden Anniversary Cake

Recipe Introduction
(5 egg yolks and 2 egg whites)

4 cups sifted Swans Down Cake Flour (any)
4 tsp Calumet Baking Powder
1 cup butter
2 cups sugar
5 egg yolks, beaten until thick and lemon-colored
1 1/3 cups milk
1/2 tsp lemon extract
2 egg whites, stiffly beatenRecipe
Sift flour once, measure, add baking powder and sift together 3 times. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add egg yolks and beat well. Add flour alternately with milk, a small amount at a time. Beat after each addition until smooth. Add lemon extract. Fold in egg whites. Bake in four greased 9 inch layer pans in a moderate oven (350) for 25 minutes. Cake may also be baked in a loaf pan for about 1 hour and 15 minutes. Ice with any favorite icing.
