Recipe Introduction
The MAMA'S COOK BOOK was prepared by the Pre-School Group of the Louisville (Georgia) Parent Teacher Association many years ago when most women knew the ins and outs of cooking. Therefore part of the directions are sometimes left out.
List of Ingredients
1 cup shortening
1 1/2 cups sugar
2 tbsp. milk
5 eggs
1/2 tsp. mace
1 tsp. salt
3/4 cup chopped pecans
2 tsp. lemon juice
1 tsp. grated lemon rind
2 cups flourRecipe
Cream together shortening and sugar; add milk, mix well, add eggs one at a time, beating well after each. Sift together flour, mace and salt; add to creamed mixture. Toast nut meats; add 1/2 cup to batter. Add lemon juice and rind. Pour into greased 9" tube pan; sprinkle with remaining nut meats. Bake in moderate oven (325 F) 1 hr. 25 minutes. Cool 5 minutes. Remove from pan.
