    THE MAMA'S COOK BOOK - Mrs. W. C. Rabun

    Recipe Introduction


    The MAMA'S COOK BOOK was prepared by the Pre-School Group of the Louisville (Georgia) Parent Teacher Association many years ago when most women knew the ins and outs of cooking. Therefore part of the directions are sometimes left out.

    List of Ingredients




    1 cup butter (soft or room temperature)
    1 cup sugar
    1/4 tsp. grated lemon rind
    1 tbsp. lemon juice
    4 large eggs (1 cup)
    2 cups Softasilk flour
    1/4 tsp. baking powder

    Recipe



    Grease and flour a 9-5-3 loaf pan.

    Cream thoroughly (1 minute) 1 cup soft butter.

    Add gradually 1 cup sugar (10 minutes).

    Beat in 1/4 tsp. grated lemon rind, 1 tbsp. lemon juice (30 seconds).

    Beat in one at a time (1 1/2 minute each) 4 large eggs,(1 cup).

    Sift together and beat in all at once 2 cups of Softasilk flour, 1/4 tsp. baking powder. Beat until smooth one minute.

    Pour into prepared pan. Bake until cake tests done with a wooden pick. Cool. Slice thin and serve plain. Temperature: 300 (slow oven). Time: 75 to 90 minutes.
