    THE MAMA'S COOK BOOK - Helen Culvern

    Recipe Introduction


    The MAMA'S COOK BOOK was prepared by the Pre-School Group of the Louisville (Georgia) Parent Teacher Association many years ago when most women knew the ins and outs of cooking. Therefore part of the directions are sometimes left out.

    List of Ingredients




    4 eggs
    2 cups cake flour
    1 1/2 cups granulated sugar
    1/2 cup cold water
    Juice of 1/2 lemon
    Grated lemon rind
    1/4 tsp. salt
    1/2 tsp. soda
    1 tsp. cream of tartar

    Recipe



    Sift flour and measure 2 cups, add 1/2 tsp. soda and 1 tsp. cream tartar and sift 3 times. Separate the eggs and beat yolks until light, then add 1 cup sugar, a little at a time, adding 1/2 cup water along with sugar. Beat well, add 1/4 tsp. salt and grated rind and juice of lemon. Beat the whites until stiff and add 1/2 cup sugar a little at a time until all is used. Then fold the whites into the other mixture and put into ungreased stem pan and bake in oven 325 degrees about one hour.
