    THE MAMA'S COOKBOOK - Mrs. W. P. Esckew

    Recipe Introduction

    The MAMA'S COOK BOOK was prepared by the Pre-School Group of the Louisville (Georgia) Parent Teacher Association many years ago when most women knew the ins and outs of cooking. Therefore part of the directions are sometimes left out.

    List of Ingredients

    2 tsp. grated orange rind
    6 tbsp. orange juice
    2 tbsp. shortening
    1 tbsp. margarine
    1/4 tsp. salt
    3 cup sifted XXXX sugar (must be confectionary)
    2 oz. chocolate melted
    2 tbsp. scaled cream

    Recipe

    Let orange rind stand in orange juice 10 minutes, then strain. Cream shortening, margarine and salt together. add 1/2 cup sugar gradually, creaming until light and fluffy. Add melted chocolate and blend. Add remaining sugar, alternately with orange juice, beating smooth. Add hot cream and beat well.
