    Oat Apricot Scones

    List of Ingredients




    2/3 cup chopped dried apricots (soaked in hot water for 10 minutes, than drained)
    1 1/2 cups all purpose flour
    1/2 cup oat bran
    2 T brown sugar or brown Sugar Twin
    1 T baking powder
    1/4 teas salt
    1/4 C oil
    3/4 C buttermilk or FF milk

    Recipe



    Preheat oven to 400 degrees. Stir together flour, oat flour, brown sugar, baking powder and salt.
    Add oil, buttermilk, and apricots. Stir just until sticky dough forms.

    Knead just until dough holds together, about 6 times.
    Pat into a round about an inch thick. Cut into 8 wedges. Place on baking sheet that has been sprinkled with oat bran. Bake until golden, 15 - 18 minutes.

    225 calories with sugar, 200 without.
    2.25 grams fiber, 225 mg sodium,
    7.5 grams total fat,
    0.75 grams saturated fat
