Gluten free rhubarb pie

Mom's pie with alterations
List of Ingredients
- 2 cups almond meal
- 1/4 t salt
- 1 egg
- 2 T coconut oil
- Rhubarb, cup into small pieces
- 3 eggs
- 1 1/2 t powdered stevia
- 1/2 C Greek yogurt
Instructions
- Put first 4 ingredients in blender until it is a ball or at least intragrated. Works fast in my Blendtec.
- Press into 9 inch pie pan.
- Fill with rhubarb. Generously sprinkle with cinnamon.
- Add stevia to a little water and liquify. Mix together with beaten eggs and yogurt.
- Pour over rhubarb.
- Put in preheated 350 oven. (325 for glass)
- Bake for 55 - 60 minutes until slightly golden.
Final Comments
I have not experimented with other sweeteners. The yogurt is a filler for the sugar.
