    Nate is a sweet woman from Peru with whom I worked at Poudre Valley Hospital. I wonder how and where she is now. Her birthday is Christmas day.

    List of Ingredients




    1 C cornbread mix (Cinch is best)
    1/2 C evaporated milk
    1/4 C oil
    2 eggs
    1 can creamed corn

    1 lb. hamburger
    1 lg onion, diced
    3 hot jalapena peppers, diced
    1/2 lb longhorn cheese

    Recipe



    Mix first 5 ingredients. Brown hamburger, add salt, pepper and vinegar.

    In greased casserole dish, layer 1/2 of the cornbread mixture. Mix hamburger, onion and peppers and put on top of the cornbread. Top with cheese and then remaining cornbread. Dust with bread crumbs.

    Cover. Bake at 350 for 45min - 1 hr.
