    List of Ingredients




    1/2 C unbleached flour
    1/2 C oat bran
    1/4 C plus 2 T cocoa powder (preferably Dutch process cocoa)
    2/3 C sugar or Splenda
    1/2 t baking soda
    1/8 t salt
    12 oz coarsely chopped frozen dark sweet cherries(about 2 1/2 cups) thawed
    3 T canola oil
    1 lg egg or 3T egg substitute, lightly beaten
    1 tsp vanilla
    1/2 C chopped nuts

    Recipe



    Stir flour, oat bran, cocoa, sugar, baking soda and salt in a medium bowl.
    Add cherries, including the juice that has accumulated during thawing, oil, egg, vanilla. Stir.
    Set the batter aside for 10 minutes. Stir batter for 10 to 15 seconds. Fold in nuts.

    Spread evenly in an 8" x 8" baking pan that has been sprayed with cooking spray.

    Bake at 350 degrees for 30 - 35 minutes. Let it cool before cutting.

    9 pieces(if using sugar and egg substitute): 199 Cal, 5 g, protein, 34 g carb, 6 g fat, 1 g sat fat, 0 mg chol, 5 g fiber,114 mg sodium.
