Chocolate Oatmeal Brownie

List of Ingredients
- 1 1/2 C boiling water
- 1 C oatmeal
- 1/2 C oil: grapeseed, coconut, other or combination
- 1 1/2 C whey low sweetener,sugar or splenda
- 2 eggs
- 1 C flour: chana dal, soy or other
- 1 C cocoa
- 1 T vanilla
- 1 t baking soda
- 1 t salt, KCl works
- 1 C roasted walnuts
- 1/2 C chocolate chips
- 1 T cinnamon
- 1 heaping T inulin, Fibersure
Instructions
- Pour water over oatmeal. Let stand at least 20 minutes. Overnight works well.
- Cream oil and sweetener. Add beaten eggs. Blend and add oatmeal.
- Combine flour, cocoa, salt, cinnamon, inulin and soda. Add to mixture.
- Add vanilla.
- Add walnuts. Blend well.
- Spray pan or pans equaling 92-96 sq.inches and sprinkle with buckwheat flour or oat bran, etc. Spread in pan and sprinkle Chocolate chips on top.
- Smooth batter into pan(s). Sprinkle with choc chips. Bake at 350 degrees for approx. 40 min. Drop pan on oven rack at about 20 minutes. Do not overbake.
