    Chocolate Oatmeal Brownie

    Former co-worker, Twyla Jorgensen with my adaptations

    List of Ingredients


    • 1 1/2 C boiling water
    • 1 C oatmeal
    • 1/2 C oil: grapeseed, coconut, other or combination
    • 1 1/2 C whey low sweetener,sugar or splenda
    • 2 eggs
    • 1 C flour: chana dal, soy or other
    • 1 C cocoa
    • 1 T vanilla
    • 1 t baking soda
    • 1 t salt, KCl works
    • 1 C roasted walnuts
    • 1/2 C chocolate chips
    • 1 T cinnamon
    • 1 heaping T inulin, Fibersure


    Instructions


    1. Pour water over oatmeal. Let stand at least 20 minutes. Overnight works well.

    2. Cream oil and sweetener. Add beaten eggs. Blend and add oatmeal.

    3. Combine flour, cocoa, salt, cinnamon, inulin and soda. Add to mixture.

    4. Add vanilla.

    5. Add walnuts. Blend well.

    6. Spray pan or pans equaling 92-96 sq.inches and sprinkle with buckwheat flour or oat bran, etc. Spread in pan and sprinkle Chocolate chips on top.

    7. Smooth batter into pan(s). Sprinkle with choc chips. Bake at 350 degrees for approx. 40 min. Drop pan on oven rack at about 20 minutes. Do not overbake.
