Baked Burritos
List of Ingredients
1 can black beans
1 lb. hamburger
1 onion, chopped
olive oil
garlic, cumin, chili powder
whole wheat tortillas, 10 small (6-8 large)
16 oz low fat, no salt cottage cheese
salsa
pepper sauce
Recipe
Preheat oven to 375 degrees. Spray pan with spray oil.
Saute onions in olive oil until transluscent. Brown hamberger, add spices. Drain beans and add to hamburger.
Spread salsa over tortilla leaving a 1 inch border. Arrange meat-bean mixture down middle. Top with cottage cheese (may be mashed). Sprinkle a few drops of pepper sauce on top. Can add shredded cheddar if wanted. Roll and put into pan. Bake for 25 minutes. Top with desired: avocados, tomatoes, lettuce, scallions, cilantro.
