    Crisp-Crusted Catfish

    List of Ingredients




    2 T light ranch dressing
    2 large egg whites
    6 T yellow cornmeal
    1/4 C Parmesan cheese
    2 T flour
    1/4 t ground red pepper (cayenne?, paprika not enough)
    1/8 t salt
    4 (6oz) farm raised catfish fillets
    cooking spray
    lemon wedges

    Recipe



    Preheat oven to 425 degrees.
    Whisk egg whites and ranch dressing together.
    Combine cornmeal, cheese, flour, salt and red pepper in a shallow dish..
    Dip fish in egg mixture and then dredge in cornmeal mixture.
    Place fish on baking sheet coated with cooking spray.
    Bake 12 minutes on each side
