    Cracked Wheat Pilaf

    List of Ingredients

    1/2 onion, chopped
    1 T. to 1/4 c. trans free margarine or oil (use less if serving with gravy)
    1/2 c. vermicelli or orzo
    1 c. coarse bulghur
    2 1/2 c. boiling chicken broth
    salt and pepper to taste

    can add dried or fresh vegetables.


    Recipe

    Melt shortening in a heavy pan with onions. Brown
    vermicelli. Add cracked wheat (bulghur) and saute together for a few minutes.
    Add broth, salt and pepper. Cover and cook for 20 minutes on
    low heat. When water is absorbed, pilaf is done. Let stand
    for 10 to 15 minutes before serving. Serves 4 to 5.
