    whole turkey
    salt or salt substitute.

    Recipe



    Put turkey in vessel (pail or bucket) and cover with salt water for 6 hours or overnight refrigerated. (? in snow or vehicle if cold enough). Drain and pat dry.

    Bake breast side down for 45 minutes at 500 degrees.
    Cover turkey and lower temperature to 350 degrees for total time minus 1 hour 15 minutes.
    Turn turkey over and bake at 450 degrees uncovered for the final 15 - 30 minutes.

    Let set for 15 minutes before carving.

    Total times:

    8 to 12 lbs: 3 1/2 hours
    12 to 16 lbs: 4 hours
    16 to 20 lbs: 4 1/2 hours
    20 to 24 lbs: 5 hours
