Chicken Enchilada Casserole

Instead of individual enchiladas, I make this quick chicken enchilada casserole. To make it really quick, use leftover chicken from another meal, or buy a can of chunk chicken already cooked:
Cooked chicken, chopped or shredded, about 2 cups, 2 cans green chilies, 2 cans mushroom soup, 1 can chicken broth, corn tortillas, shredded Cheddar cheese,
Heat the chilies, mushroom soup and broth in skillet. (Saute onions first if you like, I leave them out because I can't stand onions). While that's heating, tear up the tortillas into pieces (4-6 pieces per tortilla). Put a little of sauce in bottom of 9x12 casserole. Next add a layer of tortillas. Add a layer of chicken. Add layer of cheese. Pour some of heated mixture over top. Repeat 1-2 times. Finish with cheese on the top. Heat in 350 degree oven 10-15 minutes.

Another variation
Instead of 2 cans of green chiles and 2 cans of cream of mushroom, I use 2 cans of cream of chile poblano.
They are NOT that spicy and it's very good, there are tidbits of corn in it that's what makes it even more delicious!

Turned out well
Angelina, I made this last night and it turned out great. My only mistake was substituting the diced chilies with diced jalepenos. (Boy, those Ortega cans looks alike.) It turned out HOT! But it's a very good recipe -- thanks for sharing.

Chicken Enchilada Casserole - another recipe
4 boneless chicken breasts - cut up, chopped onion, 2 cans enchilada sauce (hot or mild), 1 can tomato soup, 1 can green chilis, Tortilla chips - mashed up (use those leftovers at the bottom of the bag!), Cheddar or Mexican shredded cheese
Mix enchilada sauce with tomato soup to make a sauce. Layer the the ingrediants (including the sauce) like lasagna in a casserole dish. Bake at 350 for about 45 minutes (or until it's done how you like it).
You can substitute the soup for cheddar and the tortilla chips for Fritos for a different taste.
This is great for a pot luck!

looking for similar recipe with hamburger
today at work a womam brought a dish similar to the quick chicken enchilada recipe, except it has a layer of hamburger meat, rotel and mushroom soup, tortilla chips and lots of cheese. Does this sound familiar to any one? Help, i would like to make this tonight.

Hamburger enchilada
I make this recipe alot. It is quick & very easy. 2 cans cream of mushroom mixed with 1 can rotel, 1 pound browned hamburger. Crush tortilla chips in bottom of casarole dish. Layer hamburger over chips. Pour soup mixture over meat, then top with lots of cheddar cheese. Bake @ 375 for about 15 minutes or until soup starts to boil. I also make it with canned chicken and cream of chicken soup instead of mushroom.

mexican lasagna
this is my first time to do this, but im having a ball. i made up this cool recipe a few years ago and we cant get enough of it. its not made with chips but flour tortillas and its good and super easy. Brown one lb. of hamburger meat drain and rinse cooked hamburger meat under running water. you dont have to do this but i kind of think its nasty if i dont.add 1 can cream of chicken soup,and fill the soup can full of milk and mix with the hamburger meat.add 1/2 cup of cubed velveeta cheese,and 1 can of chopped rotell tomatoes. this can be thrown all together and heated in the microwave too.put soup mixture in a casserole dish,then a layor of flour tortillas keep layoring and top with shredded mozarella cheese. bake in 375 oven till hot,or microwave this bad boy!!!! its better if you dont rush this recipe and let the tortillas get soft before baking. ENJOY! AND LET ME KNOW WHAT YOU THINK.

Quick Chicken Enchidada's
2 cooked chicken breasts cubed or shredded 2 cans Campbells cream of chicken soup 1 can diced green chilis handfull of diced onions to your taste Flour tortillas Cheddar Cheese
I mix cream of chicken soup with green chilis and onions and let set for an hour or so, I add water to get a smooth texture.
Place chicken and cheese in flour tortillas roll and place in ungreased pan, pour soup mixture over all and put more cheese on top and bake at 350 for 30 minutes.
