    Lemon Rum Sauce

    LEMON RUM SAUCE
    6 TBL unsalted butter
    3 TBL sugar
    1/4 cup fresh lemon juice
    Grated zest of 1 large lemon
    2 egg yolks, beaten
    3-6 TBL rum

    In a saucepan, combine butter & sugar. Cook over low heat until well blended. Stir in the lemon jucie & zest. Pour some of the butter mixture into the yolks & whisk to blend. Pour this mixture back into the pan. Whisk over low heat until slightly thickened. Stir in rum to taste.
