VELA'S ANTIPASTO SALAD

List of Ingredients
- 1 (12oz box) Mueller's Twist Trio Macaroni
- 1/2 cup Mazola Corn oil
- 3 tbsp wine vinegar
- 2 tsp garlic salt
- 1/2 cup grated parmesan cheese
- 1 box frozen broccoli flowerets or spears, cooked tender/crisp
- 2 (4oz pkg) sliced pepperoni (cut each slice in half)
- 2 pints cherry tomatoes (1pt. quartered, 1pt. whole)
- 8 oz pkg shredded cheddar cheese
- 1 (6 oz) can black olives, sliced (save 1/4 can whole)
- 5 small green onions, finely sliced
- 1/2 green pepper, diced
- 2 stalks celery, diced
- 2 carrots, grated
- 2 (8 oz bottles) kraft creamy italian dressing
Instructions
- Boil noodle twists 9 minutes(drain). In large bowl, stir together corn oil, vinegar, and garlic salt. Add warm twists and parmesan cheese. Stir to coat well. Chill 3 hours overnight. Add remaining ingredients.
- Mold into a mound over lettuce and sprinkle top with remaining portion of the mozzarella cheese. Garnish platter with remaining whole cherry tomatoes and whole olives alternately around mound. Top with one olive and one quartered tomatoe.
