    List of Ingredients


    • 3 bunches collard greens
    • 2 ham hocks
    • 1 1/2 tablespoons salt
    • Hot peppers


    Instructions


    1. Clean greens with a towel and break off all long stems. Stack with larger green leaves on the bottom. When you have sizable stack, roll tightly and cut into 1/4 inch strips. Wash in the sink, changing water until greens are completely clean. Place in pot, fill about 2/3 full with water. Let come to a boil, and continue boiling for 10 minutes. Drain, refill with same amount of water, add ham hocks and salt and cook until greens and ham hock are tender, approximately 3 hours. Add hot pepper to taste and let simmer for 10 to 15 minutes.
