    Carrot Cake Muffins

    List of Ingredients


    • 1/4 cup oil
    • 1/2 cup applesauce
    • 1 cup sugar (or less, they're quite sweet with 1 cup)
    • 1 1/2 cups whole wheat flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • 2 eggs
    • 1 cup grated raw carrot (about 3 medium carrots)
    • 1/2 cup pecans (optional)


    Instructions


    1. Combine oil, applesauce, sugar, flour, baking soda, baking powder, cinnamon, salt and eggs.

    2. Gently stir in carrots.

    3. Grease muffin tins or place muffin papers in pans. Fill cups 2/3 full of batter.

    4. Bake at 400 degrees for 15-20 minutes.

    5. You can also make carrot bread by pouring batter into a greased 9x5x3 loaf pan and bake at 350 degrees for 50-60 minutes.
