Carrot Cake Muffins

List of Ingredients
- 1/4 cup oil
- 1/2 cup applesauce
- 1 cup sugar (or less, they're quite sweet with 1 cup)
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 1 cup grated raw carrot (about 3 medium carrots)
- 1/2 cup pecans (optional)
Instructions
- Combine oil, applesauce, sugar, flour, baking soda, baking powder, cinnamon, salt and eggs.
- Gently stir in carrots.
- Grease muffin tins or place muffin papers in pans. Fill cups 2/3 full of batter.
- Bake at 400 degrees for 15-20 minutes.
- You can also make carrot bread by pouring batter into a greased 9x5x3 loaf pan and bake at 350 degrees for 50-60 minutes.
