Oatmeal Applesauce Muffins

- 1 cup rolled oats (or quick oats)
- 1 cup buttermilk (see comments)
- 1 cup whole wheat flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp salt
- 1/2 cup packed brown sugar
- Cinnamon, nutmeg, allspice or apple pie spice to taste
- 1/2 cup applesauce
- 1 egg
Instructions
- In small bowl, mix oats with buttermilk, heat for 30 seconds in microwave until just warm. Allow to sit while mixing other ingredients.
- Combine flour, baking powder, baking soda, salt, brown sugar and spices. Mix until no brown sugar lumps remain.
- Add applesauce and egg to oat mixture.
- Add oat mixture to dry ingredients and stir until just moistened.
- Spoon into muffin tin prepared with paper liners or sprayed with non-stick cooking spray. Fill 1/2-3/4 full.
- Bake at 375 degrees for 20-25 minutes. Makes 12 muffins.
Final Comments
You can use skim milk with 1 tablespoon lemon juice or vinegar in place of buttermilk.
