Chicken Breasts Lombardy
8 chicken breast halves, skinned and boned
1/2 cup mozzarella, shredded (I use more;-)
1 stick butter, divided
1 cup sliced fresh mushrooms
1/2 cup flour
1/2 cup parmesan, grated (I use more)
1/3 cup chicken broth
1/2 cup marsala
Recipe
Flatten chicken breasts between waxed paper
to 1/8". Coat chicken lightly in flour. Melt
2 Tbl. butter in large skillet; cook chicken
over med heat 3-4 minutes each side or until
golden brown. Place chicken in 13x9x2 baking
dish, overlapping edges. Repeat with
remaining chicken adding 2 Tbl butter to
skillet. Saute mushrooms in remaining 1/4 cup
butter. Sprinkle mushrooms evenly over
chicken. Stir marsala and broth into pan
drippings and simmer 10 minutes, stirring
occasionally. Spoon sauce over chicken. Bake
at 400 for 10 minutes. Combine cheeses and
sprinkle over chicken and bake an additional
5 minutes.
