    MOTHER'S CHRISTMAS CAKE

    Recipe Introduction


    This recipe was sent to me by my friend Marcy in Shawnee Mission, Kansas!! It was sent to her, by her friend Geoff from Austrailia!


    List of Ingredients


    • 12 oz's Plain flour
    • 1 Level teaspoon bicarb soda
    • 1 Level teaspoon salt
    • 3 Level teaspoon mixed spices (alspice)
    • 1/2 Level teaspoon ground ginger
    • 2 Level teaspoon cinnamon
    • 1/2 Level teaspoon ground nutmeg
    • 1/2 lb butter
    • 1/2 lb dark brown sugar
    • 1/2 lb currants
    • 1/2 lb sultanas
    • 1/2 lb seeded raisins
    • 3 0r 4 oz mixed peel
    • 2 oz's chopped almonds
    • 1/4 lb preserved ginger
    • 20z's crystallized cherry's
    • 4 or 5 eggs
    • appox 1/2 cuo of sherry


    Instructions


    1. Line the cake tin (8 x8 x3) with cooking paper greaseproof),

    2. Prepare fruit and nuts, sift flour, soda and spice and salt twice thoroughty.

    3. Cream butter and sugar, add eggs gradually and beat well.

    4. Then stir in the sifted ingredients and fruit alternately mixing all thoroughtly add sherry last,

    5. Put into prepared tin and bake in moderate oven for 3 to 3 1/2 hours ,bake at 300F gas (you will have to adjust for electri ovens )  which takes about 3  to 3 1/2 hours ..

    6. pour another 1/2 cup of sherry on top of cake when cooked ..

    This was added at the end of his letter to Marcy:Hope your friend loves this recipe Marcy its a very old one over 100 year old , came from England by my grandmother ..   take care my friend your aussie mate Geoff..
