    GERMAN APPLE PANCAKES


    List of Ingredients


    • 1 cup peeled, cored and thinly sliced Granny Smith, or other green apple
    • 2 T unsalted butter
    • 1/3 cup plus 1 tsp. sugar
    • 1 tbs cinnamon
    • 3 large whole eggs
    • 1 large egg yolk
    • 11/3 cup all-purpose flour
    • 1/4 t salt
    • 1/3 cup half-and-half


    Instructions


    1. In a heavy ovenproof 10-inch skillet cook the apple slices in the butter over moderate heat, turning once, for 2 minutes and remove the skillet from the heat.
    2. In a small bowl combine 1/3 cup of sugar with the cinnamon and sprinkle the mixture over the apples.
    3. In another bowl whisk togather the whole eggs and the yolk.
    4. In another bowl whisk togather the flour, the remaining 1 tsp sugar, and the salt, add the cream whisking, and whisk in the egg mixture. Pour the batter over the apples mixture, bake the pancake in the skillet in the middle of a preheated 400 deg. oven for 12 to 15 minutes, or until it is puffed and golden, and invert it onto a heated plater. Serves 2
