    GREEN SALSA

    Use this salsa as you would the more familiar red varieties. Tomatillos (Mexican-style green tomatoes) are available at most large supermarkets. Makes about 2 cups


    List of Ingredients


    • 8 Tomatillos, husks removed
    • 3 Shallots, peeled
    • 2 cloves Garlic, peeled
    • 1 can Mild green chiles
    • 1/4 cup Cilantro, chopped
    • 1 Jalapeno, seeded (optional)
    • Salt to taste


    Instructions


    1. Place all the ingredients in a food processor bowl. Pulse until a course salsa forms. Serve immediately or cover and refrigerate.
