NEVER FAIL CREAM PIE
List of Ingredients
- 2/3 cup sugar
- 1/3 cup cornstarch
- 1/3 tsp salt
- 2 cups milk, scalded
- 3 egg yolks, beaten
- 2 Tbsp. butter
- 1 tsp vanilla
- 1 baked pie shell
Instructions
- Blend sugar, cornstarch and salt. Slowly stir in hot milk. Cook and stir till thickens.
- Add 1/3 mixure to beaten egg yolks, the stir back into custard. Stir and cook 2 minutes more. Remove. Cool a little-for at least 10 minutes (important step).
- Add butter and vanilla. Pour into baked pie shell.
- Meringue: 3 egg whites, beaten stiff, then slowly add 1/4 cup sugar. Place on top of pie and put in 350 degree oven until top is lightly brown.
