    ALFREDO POTATOES


    List of Ingredients


    • 2 large baking potatoes
    • 1 C. prepared Alfredo sauce
    • 1 tsp.garlic powder
    • 1/2 tsp.pepper
    • 1/8 tsp. dried thyme
    • 1 C. shredded Cheddar cheese, divided
    • 1/2 C. shredded Mozzarella cheese


    Instructions


    1. Pierce potatoes and microwave on high for 6 minutes or until tender. Allow potatoes to cool slightly.
    2. Meanwhile, in a bowl, combine Alfredo sauce, garlic powder, pepper and thyme.
    3. Stir in 1/2 C. Cheddar and the Mozzarella cheese.
    4. Cut potatoes in half lengthwise. Scoop out the pulp, leaving a thin shell. Mash the pulp and add to the sauce mixture; mix well.
    5. Spoon into potato shells. Sprinkle with remaining Cheddar. Microwave on high for 1 minute or until cheese is melted.
    6. Serves 4. This recipe was tested in a 850 watt microwave oven.
