GREEN BEANS & PORTABELLO MUSHROOMS

List of Ingredients
- 1 1/2 lb (675g) Green Beans, cut into 2 inch (5cm) peices
- 4 large Portobello Mushrooms, stems removed and cut into thin slices
- 1-2 Shallots, finely chopped
- 4 thick slices Smoked Bacon, use your favorite kind to taste
- Salt to taste
- Fresh Ground Black Pepper
Instructions
- In a large pot, add a little salt and bring to a boil over high heat. Add the green beans and cook for about 3 minutes. Drain and rince the beans under cold water and pat the beans dry. Reserve.
- In a large skillet, cook the bacon over medium heat, turning until the bacon is crisp and brown (about 5 minutes). Transfer the cooked bacon to paper towels to drain. Crumble bacon into 1/2 inch (1cm) peices. If there is a lot of bacon fat then drain until there is just a tablespoon or two of bacon fat.
- Add the chopped shallots and cook, stirring often, until the shallots are softened. Add the mushrooms and cook until lightly brown and tender (about 5 minutes).
- Add the green beans to the skillet and saute until heated through. Stir in crumbled bacon. Add salt and pepper to taste. Transfer green bean mixture to a warmed searving dish, cover and enjoy immediatly.
