    GREEN BEANS & PORTABELLO MUSHROOMS

    Recipe Introduction




    List of Ingredients


    • 1 1/2 lb (675g) Green Beans, cut into 2 inch (5cm) peices
    • 4 large Portobello Mushrooms, stems removed and cut into thin slices
    • 1-2 Shallots, finely chopped
    • 4 thick slices Smoked Bacon, use your favorite kind to taste
    • Salt to taste
    • Fresh Ground Black Pepper


    Instructions


    1. In a large pot, add a little salt and bring to a boil over high heat. Add the green beans and cook for about 3 minutes. Drain and rince the beans under cold water and pat the beans dry. Reserve.

    2. In a large skillet, cook the bacon over medium heat, turning until the bacon is crisp and brown (about 5 minutes). Transfer the cooked bacon to paper towels to drain. Crumble bacon into 1/2 inch (1cm) peices. If there is a lot of bacon fat then drain until there is just a tablespoon or two of bacon fat.

    3. Add the chopped shallots and cook, stirring often, until the shallots are softened. Add the mushrooms and cook until lightly brown and tender (about 5 minutes).

    4. Add the green beans to the skillet and saute until heated through. Stir in crumbled bacon. Add salt and pepper to taste. Transfer green bean mixture to a warmed searving dish, cover and enjoy immediatly.
