Roasted vegetables (Serves 4)
List of Ingredients
1 medium courgette
1 medium summer squash
1 red pepper
1 yellow pepper
1 red onion
6 mushrooms
3 tablespoons of extra-virgin olive oil
1 teaspoon of salt

Heat the oven to gas mark 8. Chop the vegetables and place in roasting dish with oil and salt. Spread evenly and roast for 30 minutes, stirring occasionally
