    Lemon Chicken Stir-Fry

    List of Ingredients


    • 1 Cup fresh boccoli floret
    • 1 Cup red bell pepper, chopped
    • 1 Med carrot, chopped
    • 1 tsp fresh ginger root, peeled & finely chopped
    • 3 Green onions with tops, sliced
    • 1 Lemon
    • 1lb Boneless, skinless chicken breast halves
    • 2 Cups water
    • 2 Pkgs (2.8oz.) baked chicken flavor ramen noodles


    Instructions


    1. Chop pepper, carrot & ginger. Diagonally slice green onions inot 1" pieces. Zest lemon. Cut chicken into strips.
    2. Heat wok over med heat until hot. Lightly spary with oil. Add chicken, cook 3-4 min, stirring frequently. Add ginger, cook 30 seconds. Add water, bring to a boil. Add noodles, broken into pieces & seasoning packets. Bring to a boil, reduce heat. Add broccoli & carrot; simmer 3 min or until noodles are tender & most of liquid is absorbed. Add pepper, onions & lemon zest to wok; heat through. Drizzle with fresh lemon juice.
