Lemon Chicken Stir-Fry

List of Ingredients
- 1 Cup fresh boccoli floret
- 1 Cup red bell pepper, chopped
- 1 Med carrot, chopped
- 1 tsp fresh ginger root, peeled & finely chopped
- 3 Green onions with tops, sliced
- 1 Lemon
- 1lb Boneless, skinless chicken breast halves
- 2 Cups water
- 2 Pkgs (2.8oz.) baked chicken flavor ramen noodles
Instructions
- Chop pepper, carrot & ginger. Diagonally slice green onions inot 1" pieces. Zest lemon. Cut chicken into strips.
- Heat wok over med heat until hot. Lightly spary with oil. Add chicken, cook 3-4 min, stirring frequently. Add ginger, cook 30 seconds. Add water, bring to a boil. Add noodles, broken into pieces & seasoning packets. Bring to a boil, reduce heat. Add broccoli & carrot; simmer 3 min or until noodles are tender & most of liquid is absorbed. Add pepper, onions & lemon zest to wok; heat through. Drizzle with fresh lemon juice.
