    Scallop Pasta Salad

    List of Ingredients


    • 4oz. Dry spinach pasta (fettucini)
    • 1/2lb Fresh scallops
    • 1 Cup Broccoli crowns
    • 1 Cup chopped Tomato
    • 1 Cup sliced fresh mushrooms
    • 2 Tbs Lemon juice
    • 2 Tbs Rice wine vinegar
    • 1/4 Cup olive oil
    • 1 tsp Dry mustard
    • 1 tsp Sugar
    • 1 Clove garlic, minced
    • 4 tsp Dried basil
    • 1 Bunch leaf lettuce, washed & drained lemon wedges


    Instructions


    1. Cook pasta as directed on package & drain. Steam broccoli just until tender.
    2. Saute scallops in 1 Tb oil, just until opaque (3-4 min).
    3. In a large bowl, combine lemon juice, vinegar, remaining oil, mustard, sugar, garlic & basil. Mix well.
    4. Add pasta, broccoli, tomatoes, mushrooms, & scallops. Gently toss.
    5. Serve pasta mixture over lettuce. Garnish with lemon wedges.
