    The best darn carrott cake in the world

    List of Ingredients




    Cake
    2 cups sugar
    1 1/2 cups oil
    beat together for 10 min in mixer

    Add

    1t salt
    2t baking soda
    2t baking powder
    2 1/2 t cinnamon
    5 eggs, beat in 1 at a time
    2 1/2 cups flour, fold in mixture
    3 cups grated carrots, dredged in flour
    1 cup grated walnuts

    cream cheese frosting

    8oz cream cheese
    2 sticks or 1 cup softened butter
    2t vanilla
    16oz (2cups) powered sugar

    pour into 3 round 8" prepared cake pans. to prepare pans; grease lightly with baking spray; cut 3 round pieces of parchment paper for bottoms of pans, then lightly flour pans, tap out excess.
