this recipe is the best chicken pot pie i have ever had, its very tasty & tender.
List of Ingredients
1 pack 10oz frozen peas & carrots
1/2c onion
1/2 c chopped fresh mushrooms
1/4c butter
1/3c flour
1/2t salt
1/4t ground sage
1/8t pepper
2c chicken broth
3/4c milk
1T chicken bouillon granules
3c cooked chicken
1/4c pimento or roasted red sweet peppers
1/4 fresh parsley or 3T dried

I roast a whole chicken and season it with parsley, thyme, basil,meanwhile I cut up everything and measure it out to have ready.I have the meat cut up also before I start cooking everything else. I make the crust ahead of time and then put in frigerator for about an hr prior to rolling out.
cook peas and carrots occording to directions on packet; in a sauce pan cook onion & butter & mushrooms till tender but dont burn the onion. stir in the flour,salt,sage & pepper, this will become very thick let it cook for a few minutes, but keep stirring so it dont burn (this is called a rou). add broth,milk,bouillon all at once but alittle at a time so it dont clump up on u,cook till it gets thicker than it was when u added the broth, about 5-10 minutes. stir in drained vegetables,pimento,and parsley heat a few minutes,at this point u want to have the crust ready in the pans, then pour mixture into pan i use a 9 X 9 pan.
bake 450 for 10 -12 minutes or 350 till lightly browned, makes about 6 servings
