    Creamy-Glazed Fruit Salad***

    If you've got fresh fruit in the house, then you've got to whip up this Creamy-Glazed Fruit Salad. This diabetic friendly fruit salad recipe is bursting with fresh flavors and a lightly sweetened yogurt glaze that makes it just perfect.

    What You'll Need:
    • 1 (15-ounce) can mandarin oranges, drained and reserved juice
    • 2 tablespoons water
    • 2 teaspoons cornstarch
    • 2 tablespoons honey
    • 1/4 cup non-fat vanilla Greek yogurt

    • 1 cup sliced strawberries
    • 1 cup chunked cantaloupe
    • 1 cup chunked honeydew
    • 1/2 cup blueberries

    What To Do:
    1. In a small saucepan over medium heat, whisk the reserved juice, water, cornstarch and honey for 3-5 minutes, or until thickened. Pour mixture into a small bowl and let cool. Stir in yogurt.

    2. In a large bowl, combine remaining ingredients and mandarin oranges. Just before serving, pour mixture over fruit and gently toss until evenly coated. Serve immediately.
