Minty Pineapple Margaritas on the Rocks

Love fresh margaritas on the rocks? This version is packed full of sweet pineapple juice and chopped mint. Note: You can rim your glasses with salt if you want, but I found it to be enjoyable without.
Ingredients:
• 1-1/2 cups pineapple juice
• 1 cup lime juice
• 1 cup tequila
• 1 cup triple sec
• Fresh mint leaves
• Frozen pineapple chunks
Directions:
1. To a large pitcher, add the pineapple juice, lime juice, tequila and triple sec. Stir to combine, and then taste. If the mixture is too tart, you can add in agave, simple syrup or fine sugar to help sweeten it a bit.
2. To serve, add a few mint leaves to the bottom of a glass, and muddle slightly. Add in the frozen pineapple chunks, and pour in the margarita mix. Enjoy cold.
